I absolutely love what Anthony William says about avocados in his book ‘Life Changing Foods’.
I mean wow, that just tingled my heart and brought tears to my eyes! Excuse me for getting all emotional! My family has been so blessed with (in fact surrounded by!) these magic green healing orbs, ovals, and pear-shapes here on our little piece of Big Island paradise. I am ecstatic about what we learned today reading about this glorious fruit!
We were already aware of avocados’ magic polyphenols and their soothing effects on the digestive system. We also knew that these same healing properties are also found in the leaves of the avocado tree. This fact has helped to heal my IBS and Colitis just by in~joying our simple Tiki Tisane recipe daily, which infuses avocado leaf magic in hot water exactly like Tea!
However we were unaware of the spiritual connection to love and compassion. It makes complete sense now, looking back. Of course these luscious green balls from beyond are here to teach us unconditional love and compassion! It seems so fitting, especially for myself as I walk this meandering healing path!
I dare say the magic is working! My body is healing! Although I’ve only been on the Medical Medium protocol for 4 months (our entire family for three months) and there is still a very long way to go, I have great hope for the day when I will no longer suffer through a daily panoply of debilitating symptoms!
Therefore, in honor of the incredibly edible awesome avocado we wanted to share this simple (and very comforting) potato salad recipe. This recipe served our family of four and was simply devoured. Recently we began serving this atop a fresh green salad (yum!) in which case it serves more like 6-8. Here at Hovegrown (our off-grid Pane family homestead), with two very active and rapidly growing young girls, there never seems to be enough for seconds!
The first part of this recipe begins with what we call our ‘Cuisinauts Gremolata Sauce’– a new found favorite that is great to season so many different things: Stir it into steamed veggies. Add it to avocado to dress a potato salad (like in this recipe) or add more citrus juice and a little maple syrup or raw honey and magically you have a fabulous fat-free salad dressing!
* In a small bowl add:
• 1-2 Tablespoons fresh chopped parsley (we used curly leaf)
• 4-6 Garlic cloves crushed and finely minced (or more if you like!)
• 2 Tablespoons chives, finely chopped (A good pair of kitchen scissors work great to mince chives nice and small)
• ½ Teaspoon smoked Spanish paprika
• ¼-½ Teaspoon Korean red pepper flakes
• Zest and juice of 1 lemon
• Sprinkle of sea salt (optional)
Stir together until well-combined and let sit for a few minutes to activate all the flay’vahs!
In a large bowl add:
• 2-3 Pounds steamed potatoes (we used golds in the picture but also love reds and sweet potatoes for twists on this recipe).
• 1 Large cucumber sliced and quartered
• 3-4 Scallions thinly sliced
• 1 Avocado, about ½ cup mashed up
Stir until all ingredients are well combined. Taste test and adjust the seasonings as desired. Serve immediately so you can enjoy your fabulous crEATion and bask in the love and compassion from your avocado! This will keep in the refrigerator for 24 hours prompting the flay-vahs to fuse overnight thereby becoming even better! The challenge is having the patience to allow this infusion process to transpire!
